Pancakes are a tried and true breakfast item that my little guys will always gobble up. They save well and are great snacks for them to have later on when I'm making another meal. This recipe was adapted from All Recipes and is a much heartier and healthier version. Banana bread meets pancakes! Bon appetite!
1 1/2 cups whole wheat flour
1 cup white flour
3 1/2 Tbsp Rumford baking powder
2 Tbsp raw cane sugar
2 mashed ripe bananas
1/4 cup applesauce
1 cup dairy free milk (soy, rice, coconut, etc.)
1/2-1 cup water
3 Tbsp oil
Mix the dry ingredients in a bowl before adding the wet. Add the wet ingredients and mix well. If batter is too thick, add water until you get a nice consistency. If it's too pasty, you can also try adding more applesauce. Cook over low-medium heat and serve with nut butters, chia seeds, pure maple syrup, flaxseed, fruit, applesauce, or some other creative toppings!
