Queso Cheese Sauce

This queso cheese is quick to make, and the perfect cheese sauce to make for nachos, cheesy broccoli soup, or macaroni and cheese. Since we have a little guy who is allergic to tree nuts, we use sunflower seeds instead of the cashews, which are often used in other vegan cheese sauce recipes. Plus, sunflower seeds are less expensive than cashews and are also packed with nutrients! 

2 cups water
1/3 raw sunflower seeds (unsalted)
1/4 cup pimentos
1/4 cup nutritional yeast
2 tablespoons cornstarch
1 tablespoon lemon juice
1 1/4 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon onion powder

Blend all of the ingredients and transfer to saucepan. Bring to a gentle boil while stirring to prevent burning.
