Spring Rolls

I love Thai food! My husband knows this and started out our relationship right by taking me out to a Thai restaurant on our first date. This recipe gives a satisfying crispy crunchiness, without being deep fried. We think you'll like it!!


Ingredients:
Fillo dough sheets
1 recipe scrambled tofu 
1 shredded carrot
1/2 shredded cabbage
1/3 cup Just Mayo (optional)

Set fillo dough out to thaw to room temperature. Prepare scrambled tofu according to directions, and add shredded carrot and shredded cabbage to sauté with onion and tomato. Once veggies are soft, add tofu. For a richer flavor, stir in the Just Mayo to your tofu mixture. Unroll the package of fillo dough and spoon the tofu mixture onto one end of the dough. Grab two sheets of fillo dough as you roll the tofu into a roll.











Cut into spring rolls and bake them on oiled baking sheet for 20 minutes at 350 degrees until browned and crispy. Turn over half way through the baking time to brown both sides. Serve with a sweet and sour sauce and stir fry!
