This is a fabulous creation for families that need a plant based pesto that is nut free. It is delicious on pasta, rice, and sandwiches.

3 cups fresh spinach
1 cup fresh basil
1/3 cup sunflower seeds
1 tsp salt
1/3 cup nutritional yeast
2 cloves garlic
1/2 tbsp lemon juice
1/2 cup olive oil

Add all of the ingredients in to the blender and give it a whirl! Adjust seasoning measurements to your taste preference. Sometimes I add a little extra olive oil to make a smoother pesto sauce. I love my Vitamix plunger for thicker jobs like this pesto. It's best if used immediately, but can be refrigerated for use within a few days.
